Ingredients

chicken breast1 Lb Chicken Breast
chicken broth3 Cups Chicken Broth
olive oil1 Tbsp Olive Oil
tomatoes1 Can Diced Tomatoes with Green Chiles
taco seasoning1 Tbsp Taco Seasoning
cream cheese8 Oz Cream Cheese
heavy cream1/2 Cup Heavy Cream
cheddar cheese1/2 Cup Shredded Cheddar Cheese
green onions to garnishGreen Onions to garnish

Directions

Put Instant Pot on saute and add oil. Stir in the tomatoes and taco seasoning and cook for 2 minute just to toast the spices.

Add in the chicken and broth. Add in cubed cream cheese. Close lid and set lid to sealing.  Pressure cook on high pressure for 15 minutes.

Release pressure safely. Remove the chicken, shred and set aside.

Stir in heavy cream and use an immersion blender to make the soup creamier.

Stir in cheese and chicken. Salt and pepper. Garnish with green onions and more cheese. Serve!
