cauliflower1 Lb. Cauliflower
cream cheese6 Oz. Cream Cheese
rice vinegar1 Tbsp Rice Vinegar
coconut aminos1 Tbsp Coconut Aminos
nori paper6 Sheets Nori Paper
cucumber1 Cucumber
avocado1 Avocado
favorite sushi fish6 Oz. Salmon, or Favorite Sushi Fish

Directions

Rice the cauliflower.

Slice the cucumber horizontally.Then, slice those pieces into small strips.

In hot pan, add cauliflower rice and cook. Season with 1Tbsp aminos as it cooks.

Once the cauliflower is cooked and dried out, add to a bowl with cream cheese and vinegar. Mix together well and set in the fridge until cool.

Once the rice mixture is cooled, slice avocado into small strips and scoop out.

Put nori down on a bamboo roller covered with saran wrap. Spoon some of the cauliflower rice mixture over the nor, add fillings and roll tightly.
