Ingredients

skirt steak2 lbs skirt steak
seasoning1 1/2 tsp dried Italian seasoning
pepper flakes1/4 tsp crushed red pepper flakes
sea salt and peppersea salt and black pepper, to taste
butter3 tbsp butter
onions2 large onions, thinly sliced
garlic2 large cloves garlic, minced
worcestershire sauce2 tbsp Worcestershire sauce
thyme1/2 tsp dried thyme
beef stock3/4 cup beef stock
cream1/4 cup sour cream
dijon mustard2 tbsp dijon mustard

Directions

Season steak on both sides with italian seasoning, red pepper flakes,sea salt and pepper. Place the steak on a broiling pan and set aside.

In a large saute pan over medium heat, melt the butter. Once the butter has melted, add the onions, garlic, Worcestershire, thyme and a sprinkle of salt and pepper to the pan. Sauté until the onions are nice and caramelized, about 20-30 minutes.

Once the onions are caramelized, add beef stock and dijon mustard to the pan. Mix in. Bring stock to a boil and then reduce heat to low and let simmer, about 10 minutes.

Mix the sour cream into the sauce and continue simmering until thickened. Taste, and add more salt and pepper if needed.

Heat the oven on broil.

Broil the steak on the top rack for 5-7 minutes or until it has reached the desired level of doneness.

Divide steak into 4 portions and top each portion with the onion gravy before serving. Enjoy!
