Ingredients

spaghetti squash1 spaghetti squash, halved and "guts" removed
mozzarella cheese1/4 cup shredded mozzarella cheese
parmesan cheese1/4 cup shredded parmesan cheese
cheddar cheese1/4 cup shredded white cheddar cheese
provolone cheese1/4 cup shredded provolone cheese
chicken stock1/4 cup chicken stock
heavy whipping cream1/4 cup heavy whipping cream
garlic cloves3 garlic cloves, minced
butter4 tbsp butter
olive oil2 tbsp olive oil (for brushing)
ground pepperfresh ground black pepper

Directions

Preheat oven to 400°

Cut squash in half (carefully!)

Brush squash (cut side up) with olive oil and season generously with salt and pepper

Bake on a baking sheet until tender or around 45 minutes

In a large skillet melt butter over medium heat

Add garlic and cook until soft and fragrant

Stir in cream and broth; mix until combined, then add all cheese; stir until combined

Using a fork, rake the inside of the squash and move the "spaghetti" to the skillet

Stir until completely combined and continue to heat through

Sprinkle the top with a little more cheese (if you wish) and dish out for the nom-age!
