avocados3 Large Avocados, peeled, pitted, & diced
sun-dried tomatoes4 Tbsp Sun-Dried Tomatoes Packed in Oil, chopped
onion3 Tbsp Minced Red Onion
cilantro3 Tbsp Fresh Cilantro, chopped
salt1 Tsp Salt
powdered garlic1 Tsp Powdered Garlic
egg1 Egg, beaten (for egg wash)
avocado oilAvocado Oil for Frying

Directions

In a bowl, combine Diced Avocados, Chopped Sun-Dried Tomatoes, Red Onion, Cilantro, Salt, and Garlic Powder, tossing gently to avoid crushing the Avocado.

Cut Lavash Bread into 3 Strips and brush the sides with Egg Wash.

Place a Heaping Tbsp of the Avocado mixture at the bottom of each strip, fold in the sides, and roll up to form the egg rolls.

Heat Oil to Medium and fry the Egg Rolls until evenly browned on all sides, rotating as needed, and frying for a few minutes, ensuring they do not burn.
