water1/4 Cup Water

cauliflower rice1 12 Oz Bag of Cauliflower Rice (Steamer One from Frozen)

Directions

Salt and pepper chicken breast. Set Instant Pot to Saute. Add oil and sear chicken for 2 minutes on each side.

Add enchilada sauce, chiles, onions, water. Set Instant Pot to manual/pressure cook on high pressure for 10 minutes. Prepare cauliflower rice per instructions on bag.

Release pressure, shred chicken and serve over cauliflower rice with favorite toppings.
