Ingredients

zucchini1 Zucchini, Shredded
cheddar cheese1 Cup Cheddar Cheese, Shredded
eggs4 Eggs
heavy cream1/4 Cup Heavy Cream
water1/4 Cup Water
bacon6 Slices of Bacon
flax meal4 Tbsp Flax Meal
parmesan cheese1/2 Cup Parmesan Cheese, Grated
onion powder1 Tsp Onion Powder
garlic powder1 Tsp Garlic Powder
seasoning1 Tbsp Italian Seasoning
sea salt and ground pepper1 Tsp Sea Salt and Ground Pepper
baking powder1 1/2 Tsp Baking Powder
almond flour1 Cup Almond Flour

Directions

Preheat the oven to 350 °F. Cut the bacon slices into thin strips and place on a hot pan. Cook over a medium heat until the bacon is crisped up, for 10 minutes.

Shred the zucchini and  cheese and set aside.

In a bowl, mix all the dry ingredients.

In another bowl, whisk the eggs, cream and water. Add the mixed dry ingredients into the bowl.

Combine well and add the crisped up bacon, shredded zucchini and shredded cheese.

Combine and spoon into a muffin pan. Liners optional. Should be about 10 muffins total.

Place in the oven and bake for 25-30 minutes or until the tops are golden brown and the muffins are set.  Let cool and enjoy!
