Spray slow cooker with some coconut oil spray to coat.
Break up your cauliflower into small florets and discard the core.
Add cauliflower florets, cream cheese, butter, salt, and pepper to your slow cooker and cook on low for 3 Hours.
Grate Pepper Jack cheese to your slow cooker and stir together.
Close slow cooker and cook for another 30 Minutes
Add in cooked bacon and stir. Serve warm.
