 2 lbs Skirt Steak
 1 ½ tsp Italian Seasoning
 ¼ tsp Crushed Red Pepper Flakes
 Sea Salt and Pepperto taste
 3 tbsp Butter
 2 Large OnionsSliced Thin
 2 Garlic ClovesMinced
 2 tbsp Worcestershire Sauce
 ½ tsp Dried Thyme
 ¾ cup Beef Stock
 ¼ cup Sour Cream
 2 tbsp Dijon Mustard

Season steak on both sides with italian seasoning, red pepper flakes,sea salt and pepper. Place the steak on a broiling pan and set aside.

In a large saute pan over medium heat, melt the butter. Once the butter has melted, add the onions, garlic, Worcestershire, thyme and a sprinkle of salt and pepper to the pan. Sauté until the onions are nice and caramelized, about 20 Minutes to 30 Minutes .

Once the onions are caramelized, add beef stock and dijon mustard to the pan. Mix in. Bring stock to a boil and then reduce heat to low and let simmer, about 10 Minutes .

Mix the sour cream into the sauce and continue simmering until thickened. Taste, and add more salt and pepper if needed.

Heat the oven on broil. Broil the steak on the top rack for 5 Minutes or until it has reached the desired level of doneness.

Divide steak into 4 portions and top each portion with the onion gravy before serving. Enjoy!
