Vanilla Crust
 ½ cup Coconut Flour
 ½ cup Granulated Sweetener
 ½ tsp Baking Powder
 ½ tsp Salt
 ½ cup Buttersoftened
 2 Egg Yolks
 2 tsp Vanilla Liquid Sweetener
Cake Topping
 2 oz Cream Cheese
 8 oz Heavy Cream
 1 tsp Vanilla Extract
 1 tsp Vanilla Liquid Sweetener
 4 oz Fresh Blueberries
 12 oz Fresh Strawberries
Vanilla Crust:

Add the 4 dry ingredients to your stand mixer and blend on low to combine.

Place the remaining wet ingredients into the mixer and blend on medium speed until thoroughly incorporated.

Place a large piece of parchment paper or plastic wrap on the counter and form the dough into a cylinder shape.

Wrap tightly and place into the fridge for 30 Minutes.

Cake Topping

Preheat oven to 350F. Once your dough has chilled, spread onto a baking pan lined with parchment about 8"x12".

Bake for 14 Minutes minutes or until golden brown. Allow to cool completely.

Place the cream cheese, heavy cream, vanilla extract and stevia in a stand mixer and blend on high until it has the consistency of frosting.

Spread evenly over cooled base.

Arrange blueberries in the left corner. Arrange 5 rows of Strawberries across cookie.
