Keto Chicken Cauliflower Casserole

This Keto Chicken Cauliflower Casserole is loaded with cheese, bacon, and a bunch of fresh veggies. This can be made in advance for meal prep and the portions freeze easily.

 12 Chicken Thighsboneless, skinless
 1 Head of Cauliflower
 8 oz Cheddar Cheeseshredded
 8 oz Monterey Jack Cheeseshredded
 3 Green Onions
 6 Slices of Bacon
 8 oz Cream Cheese
 1 Oniondiced
 1 Green Bell Pepperdiced
 1 tbsp Minced Garlic
 4 oz Heavy Cream
 Salt and Pepper to taste

Preheat oven to 450F. Chop the chicken up and cooking it in a pan on the stove top.

Cook the bacon in the oven for 20 Minutes at 450F or until crispy. Lower oven to 350F.

Chop up a head of cauliflower into florets.Cook the cauliflower in the microwave on the vegetable setting.

Chop up the onions and peppers and pan fry.

Add all of the other ingredients, reserving 2 Oz Cheddar and 2 Oz of Monterey Jack. Add the mixture into a large, greased casserole dish and top with the remaining cheese. Cover with foil and cook for
25 Minutes at 350F, then 5 minutes without the foil.

Let stand for a few minutes and enjoy!
