This recipe for Keto Cheesy Cauliflower Mac and Cheese is a perfect side to any meal. It can also be eaten as a meal by itself.
Preheat oven to 400ºF.
Clean and chop cauliflower into bite sized pieces. Oil and salt them before placing on a lined baking sheet.
Roast cauliflower for about 20 Minutes or until tender.
Add the rest ingredients to a large mixing bowl and stir until well mixed.
In a medium baking dish combine the cheese mixture and cauliflower, bake until cheese is melted and golden, about 20 Minutes.
Serve as a side or as a lunch or dinner.
