This Keto Cashew Chicken is sweet and has a nice crunch thanks to the cashews. This can be eaten as is or served with your favorite keto veggies or even cauliflower rice stir fry.
Heat a skillet over high heat and add the olive oil. Season the chicken thighs with salt and pepper; add to the hot pan.
Cook until well-browned, about 2 minutes per side.
Combine the all remaining ingredients (except for the green onions) in a mixing bowl and pour over the chicken.
Lower heat and cook until sauce thickens and chicken is cooked thoroughly.
Top with sliced green onions right before serving. Enjoy.
